Mango and Guava Cheesecake

Mango and Guava Cheesecake - Whānau Bake Off

Base ingredients

  • 2 oranges and a lemon
  • A packet of gingernuts
  • A packet of malt biscuits
  • 150gms butter in base
     

Filling

  • A cup of sugar
  • 2 teaspoons Vanilla essence
  • 4 teaspoons Gelatine powder
  • 4 teaspoons water 
  • 500gms sour cream
  • 250 gms kiwi cream cheese
  • 250 gms Philadelphia
  • Tinned mangos and 2 tins guavas

Base

Finely Crush biscuits. Combine biscuit crumbs lemon orange rind,  juice and buter. Line the base and sides of a 20 cm spring tin with biscuit mixture Chill while preparing filling. Pour filling into base. Chill until set.  

Filling

Combine Gelatine and water. Leave to swell for 10 minutes. Beat cream cheese until soft. Add sour cream and beat until well combined. Add sugar, lemon orange juice and vanilla. Beat until sugar is dissolved. Dissolve gelatine over hot water. Add to cheese mixture. Top with fruit once set.
