Episode 13 - Fish & Chips, Orange Kawakawa Summer drink

EQUIPMENT:

INGREDIANTS:
- 1.2 kg Kumara - mix of gold and red
- Olive oil
- 1kg fresh fish - Hoki
- Fish crumb
- 3.5 cups panko crumbs
- 7 tsp kawakawa
- 1/4 tsp salt
- 1/2 tsp pepper
- 4 eggs
- 1/4 cup milk
- 1 cup flour
- Watties tomato sauce to serve
- 2 lemons - sliced into wedges to serve
METHOD:
- Peel kumara and cut into the shape of fries
- Mix through olive oil and season with salt and pepper
- Cook fries in deep fryer xx minutes ( this needs to be tested)
- Cut fish into even sized pieces approx 5cm long
- Coat in flour
- Coat in egg wash
- Coat in panko crumb
- Place on hot grill and cook approx
- 2mins each side until golden and fish white and no longer translucent.
