Vienna Schnitzel
- 210g pork loin
- 2 tbsp flour
- 1 egg wash
- 4 tbsp dry breadcrumbs
- ¼ tsp salt and pepper
- 80ml canola oil
- 200g pikopiko (precooked)
- 80g anchovies
- 120g tomato diced
- 2 tbsp parsley (Chopped)
- 1 tbsp chives (Chopped)
- 1 tbsp chervil (Chopped)
- Olive oil
- Cut the pork and then flatten out to correct thickness.
- Season with salt and pepper then dust with flour.
- Place the pork loin into the egg wash.
- Then crumb the whole loin inside the bread crumbs, shake off any excess.
- In a hot pan with the oil we cook the schnitzel browning evenly on both sides leaving to one side when done.
- Finely dice the tomato then we add to the chopped herbs and blend in with the olive oil dressing seasoning with salt and pepper to taste.
