Vienna Schnitzel


  • 210g pork loin
  • 2 tbsp flour
  • 1 egg wash
  • 4 tbsp dry breadcrumbs
  • ¼ tsp salt and pepper
  • 80ml canola oil
  • 200g pikopiko (precooked)
  • 80g anchovies
  • 120g tomato diced
  • 2 tbsp parsley (Chopped)
  • 1 tbsp chives (Chopped)
  • 1 tbsp chervil (Chopped)
  • Olive oil


  1. Cut the pork and then flatten out to correct thickness.
  2.  Season with salt and pepper then dust with flour.
  3.  Place the pork loin into the egg wash.
  4.  Then crumb the whole loin inside the bread crumbs, shake off any excess.
  5.  In a hot pan with the oil we cook the schnitzel browning evenly on both sides leaving to one side when done.
  6.  Finely dice the tomato then we add to the chopped herbs and blend in with the olive oil dressing seasoning with salt and pepper to taste.
