Swiss Hot Pot
- 180g pork belly slice
- 80g smoked bacon
- 1 clove chopped garlic
- ½ tsp of salt
- 80g onion
- 80g celery medium diced 110g potato medium diced
- 110g carrot medium diced
- 200g cabbage medium diced
- ½ tsp caraway seeds
- 1 star anise
- 3 whole cloves
- 1 bay leaf 1 tbsp chopped parsley
- 1 tbsp tomato paste
- ½ beef tea or stock
- Dice the pork into large pieces.
- Cut bacon same size as the pork
- Place into a medium sized pot.
- Add the root vegetables
- Add the herbs and spices
- Pour in the beef tea and stir in the tomato paste
- Bring the pot to the boil then reduce the heat and simmer until all the ingredients are cooked about 15 – 20 minutes
