Irish Beef Hash

INGREDIENTS:
- 2 tablespoons vegetable oil
- 1 Medium potato (grated)
- 2 slices bacon (finely sliced)
- 200g ground beef
- 1 garlic clove (minced)
- 60g white onion (finely sliced)
- 300g white cabbage (finely sliced)
- 500ml Beef stock
- 120ml apple juice
- 1 tsp salt
METHOD:
- In medium pan heat add oil
- Heat over medium‐high heat until hot
- Add grated potato and cook until done and remove to a clean plate
- Using the same pan, add some more oil then add the garlic and onion and cook till onion translucent
- Add the ground beef and cook until meat is browned, once cooked drain grease.
- Add the cabbage and quickly heat through about 2 ‐ 3 minutes
- Add the beef stock, apple juice
- Reduce heat to low. Cover; cook until cabbage is tender. Stir in the cooked potato
