Fruit Platter Cube


  • 1 Water melon
  • 6 Kiwi fruit
  • 1 Packet Marshmallows (Large)
  • 1 Pawpaw Garnishes:
  • Orange Bud & leaf
  • Berry Coulis
  • Sugar
  • Glucose
  • Berries


For the fruit 

  1. Cut melon, kiwifruit and marsh mellows into large cubes all exactly the same size. Repeat this action again but cut into fine small cubes
  2. Prepare the Pawpaw
  3. Finely cut into small short wedges
  4. Finely cut each wedge into fine leaf shape designs and leave aside
  5. Finely cut some into small cubes for garnish
  6. Prepare the fruit coulis for garnish
  7. Blend together sugar, glucose and berries together, leave side
  8. Polish the orange bud and leaf with oil, leave aside


  1. Place the kiwifruit, melon and marsh mellow down in sequential order to create the base for fruit dessert
  2. Do this process three times until a perfect cube is created following the Rubik method of design
  3. Place the pawpaw wedges around the cube
  4. Drip small drops of coulis around the plate really carefully leaving a nice clean trail
  5. Carefully place the cubed fruit over the coulis trail all the way round
  6. Finally carefully place the polished orange bud and leaf with finish
