Mea Whakauru

  • 125g softened butter
  • Half cup of sugar
  • 1 egg
  • 2 cups flour
  • Lemon juice (1 lemon)
  • Lemon rind grated


  1. Cream butter and sugar until light and fluffy. 
  2. Add egg and lemon juice.
  3. Mix well. 
  4. Add rest of ingredients. 
  5. Roll into balls and flatten on to a greased tray.
  6. Grate extra lemon rind on to biscuits. 
  7. Bake at 180C for 15-20minutes or until golden.
