Wing Rib with Parsnip Puree

- 400g parsnips
- 1 onion
- 50g butter
- 2 garlic cloves
- Salt and pepper
- 1 cup of cream
- Drain parsnips
- blend with saute'd onion
- Add butter and cream
- 2 wing ribs
- Garlic pepper
- Barbeque seasoning
- Coat and massage wings in seasoning
- Cook one side till black
- Turn and cook 2 mins to finish
- 4 large Portobello mushrooms
- 1 tin of whole baby beets
- Salt and pepper
- Lightly fry mushrooms and grill beets
- Choux sauce
- Microgreens
Assemble plate and serve
