Wing Rib with Parsnip Puree

  • 400g parsnips
  • 1 onion
  • 50g butter
  • 2 garlic cloves
  • Salt and pepper
  • 1 cup of cream
  1. Drain parsnips
  2. blend with saute'd onion
  3. Add butter and cream
  • 2 wing ribs
  • Garlic pepper
  • Barbeque seasoning
  1. Coat and massage wings in seasoning
  2. Cook one side till black
  3. Turn and cook 2 mins to finish
  • 4 large Portobello mushrooms
  • 1 tin of whole baby beets
  • Salt and pepper
  1. Lightly fry mushrooms and grill beets
  • Choux sauce
  • Microgreens

Assemble plate and serve
