Thai Pork Burger and Lime Shake

Patties

  • 1 onion
  • 2 garlic cloves
  • 1 chilli de-seeded
  • Salt and pepper
  • 400g pork mince
  • 1 tsp ground cumin
  • 1 Tbs sweet chilli sauce
  • 2 Tbs curry paste
  • ¼ cup chopped peanuts
  • ¼ cup coriander
  • Salt and pepper
  • 2 eggs
  • 3 burger buns
  • 3 Tbs mayonnaise

Slaw salad

  • ½ red cabbage
  • 2 spring onions

Dressing

  • 1 lime
  • 1 Tbs sesame oil
  • 1 Tbs fish sauce
  • 2 Tbs peanut oil
  • 1 tsp salt
  • 1 Tbs sugar
  1. Preheat your oven to 180˙.
  2. In a hot pan dice and sauté together the onion, garlic and chilli until soft and season with salt and pepper.
  3. While those cook prepare your salad. Thinly slice the red cabbage and spring onions and toss them together in a bowl.
  4. Using your hands mix together the sautéd ingredients with the pork mince, ground cumin, sweet chilli sauce, curry paste, chopped peanuts, coriander, eggs and salt and pepper. Take about a handful of mixture and shape into a patty. Fry each patty for 2 minutes on each side before finishing in the oven for 8-10 minutes.
  5. In another bowl prepare your salad dressing. Whisk together the lime juice, sesame oil, fish sauce, peanut oil, salt and sugar and drizzle over the cabbage and spring onion.
  6. Lightly toast your burger buns and assemble your Thai burgers with mayo, slaw salad and Thai patties.
