Paua Ravioli

Paula Ravioli - Cam's Kai


  • 1/2 Red Onion
  • 2 Bay Leaves
  • 200mls Sauvignon Blanc
  • 200mls White Balsamic Vinegar

Bring to a simmer
Reduce by two thirds
Then strain through a sieve

  • 200gm Paua 
  • 1/2 Red Onion
  • 1 Chilli
  • 1/4 Bunch Coriander
  • 1 tsp Mirin
  • 1 tsp Rice Wine Vinegar
  • 2 Egg Whites
  • Salt and Pepper

Combine in a bowl

24 Wonton Wrappers

Add filling to centre of wrapper
Seal with another wrapper on top
Remove excess and poach in hot water

White Wine Sauce

  • 50mls White Wine Reduction
  • 100mls Cream
  • 250g Cold Butter Cubes
  • Salt and Pepper
  • Crispy Kumara
  • Microcress
  • Lemon Infused Olive Oil

Combine over medium heat until thickened
Garnish and serve
