Paua Ravioli

Ingredients
- 1/2 Red Onion
- 2 Bay Leaves
- 200mls Sauvignon Blanc
- 200mls White Balsamic Vinegar
Bring to a simmer
Reduce by two thirds
Then strain through a sieve
- 200gm Paua
- 1/2 Red Onion
- 1 Chilli
- 1/4 Bunch Coriander
- 1 tsp Mirin
- 1 tsp Rice Wine Vinegar
- 2 Egg Whites
- Salt and Pepper
Combine in a bowl
24 Wonton Wrappers
Add filling to centre of wrapper
Seal with another wrapper on top
Remove excess and poach in hot water
White Wine Sauce
- 50mls White Wine Reduction
- 100mls Cream
- 250g Cold Butter Cubes
- Salt and Pepper
- Crispy Kumara
- Microcress
- Lemon Infused Olive Oil
Combine over medium heat until thickened
Garnish and serve
