Oat, Ginger & Pistachio Slice


  • 150g butter
  • 1/4 cup golden syrup
  • 3/4 cup brown sugar
  • 3/4 cup coconut
  • 1 1/2 cups rolled oats
  • 3/4 cups wholemeal flour
  • 3 teaspoons ground ginger
  • 1 teaspoons baking powder
  • 1/2 cup chopped crystallized ginger


  • 120g Butter
  • 1/2 cup golden syrup
  • 2 1/2 cups icing sugar
  • 3 teaspoons ground ginger
  • 1/2 cup of roasted pistachio’s roughly chopped
  • 1/4 cup of crystillized ginger roughly chopped

  1. Preheat oven to 180 degrees celsius. Line a 32cm x 22cm slice tin with baking paper.
  2. In a large saucepan melt together the butter, golden syrup and brown sugar on a medium heat.
  3. Remove from heat and add all other ingredients to the buttery mixture. Mix well to combine. Press the mixture into the prepared tin and smooth over with a spatula or back of a spoon. Place in the oven and cook for 20mins. Once cooked remove from oven and let it stand for 5-10mins and pour on the icing and sprinkle with roasted pistachio’s and crystillized ginger.
  4. While cooking make the icing - in a sauce pan melt together over medium heat the butter and golden syrup. Once melted remove from eat and add the icing sugar and ground ginger and mix well. You should get a smooth consistency.
  5. Poor mixture over warm slice and spread with a knife to smooth over. Sprinkle with roasted pistachio’s and crystallised ginger.
  6. Leave to set and cut once cooled.
NB: To roast pistachios palace on a small tray in the oven on 150 degrees for 20 mins
