Cuzzy carrot cake

Cuzzy carrot cake:
- 3 eggs
- 1/2 cup oil
- 2 cups standard plain flour
- 1 cup sugar
- 3 teaspoons of baking soda
- 1/2 teaspoon of cinnamon
- 3 cups of grated carrot
- 1/2 cup of chopped walnuts
- 1 teaspoon of grated orange rind
- 3/4 cup of crushed pineapple
- 2 tablespoons of softened butter
- 1/4 cup of cream cheese
- 1 cup of icing sugar
- 1/2 teaspoon of grated lemon rind
Other necessities:
- 23 cm ring cake tin
- Wire rack
- Electric hand mixer
- Wooden spoon
- Spatula
Method:
I don't have the method on me - just bung it all into a bowl, stir it to mix, then spoon into greased tin and bake at 180 degrees for 40 mins, leave to cool on wire rack.
Then finish with cream cheese icing lol
