Asian Style Trout on Coconut Rice


• 1 Whole Trout
• Root Ginger
• Root Corriander
• Oyster Sauce
• Sweet Chilli Sauce
• Soya Sauce
• Lemons
• Coconut Milk
• Rice


  1. Clean and gut the trout
  2. Chop ginger into strips
  3. Chop roughly our coriander
  4. Cut the trout diagonally starting from the head
  5. Now to our herbs
  6. With the left over herbs insert in the stomach
  7. 1 cup of oyster sauce
  8. 1/3 kapu sweet chill sauce
  9. ¾ soya sauce
  10. ½ kapu wai remana
  11. Mix together
  12. Put into pre-heated oven on 160c
  13. Spoon sauce over the fish every 5 mins
  14. Wash rice to remove starch
  15. Pour in coconut milk make sure that its 1cm above rice
  16. Cook for another 10 minutes
  17. Rice on the bottom
  18. Pour the Asian flavours over the fish
