Oysters & Chorizo

Oyster Chorizo presented in oyster half shells sitting in ice


  • 12 oysters in the shell
  • 1 smoked chorizo
  • 1 splash soy sauce
  • 1 splash black vinegar
  • Coriander 
  • Red chili 


  1. Open the oysters.  
  2. Thinly slice the chorizo on an angle then put in a single layer on an oven tray and put under the grill/panfry until crispy.  Cool slightly.
  3. Put a couple of slices on each oyster then splash a few drops of soy and black vinegar on each, garnish with chopped chilli and coriander leaves. 
  4. Serve with a wedge of lime.
