Te Taraiwhara a Tamakaimoana


  • Sponge (cut into small cubes)
  • Black Doris plums
  • Sliced peaches
  • Custard
  • Mocha cream
  • Lime cordial
  • Chocolate (grated)


  1. First we whip the cream with vanilla essence and icing sugar
  2. Then I make my custard flavoured with vanilla
  3. Now we drain the juices from the plums keeping the juice and fruit separate
  4. Next we puree the peach until smooth
  5. In a small bowl we blend some of the cream with the peach puree
  6. In another bowl blend the cream with the lime cordial
  7. Now we start putting our dessert together.
  8. Using a tall dessert glass 250ml
  9. We put the sponge cake at the bottom of our glass
  10. Next we pour the plum juice over the sponge to moisten the sponge
  11. Now we place the plum pulp over the top
  12. Carefully ladle to the sides of the glass the lime cream
  13. Next one we ladle in the peach cream
  14. For the last layer top it off with whipped cream
  15. Finally finish off with the grated chocolate
