Sponge Cake on a Plate

Mea Whakauru

  • 6 eggs
  • 1 cup of cornflour
  • 2 teaspoons of baking powder
  • 1 tablespoon of plain flour
  • 1 cup of caster sugar
  • Cream
  • Jam


  1. Separate the egg whites and yolk. 
  2. Beat egg whites until it doubles in size and is stiff and pale. 
  3. Slowly add caster sugar, a bit at a time. 
  4. Once the whites are ready, add egg yolks. 
  5. Mix carefully. 
  6. Sift in dry ingredients. 
  7. Fold carefully. 
  8. Pour into a cake tin and cook for one hour. 

Serve with whipped cream and strawberry jam.
