Trio of Dessert Sauces

Mixed Berry Sauce
- 3 Tbs caster sugar
- 2 tsp corn flour
- 1/3 cup water
- Dissolve and stir until thickened.
- Add 1kg of mixed berries.
- Season with salt and sugar and bring to the boil.
- Strain to remove seeds.
Salted Caramel Sauce
- 70g butter
- 50g brown sugar
- 50g caster sugar
- 3Tbs thickened cream
- 1 tsp of salt to taste.
- Melt and combine until smooth.
Peanut Butter Sauce
- 2 Tbs sugar
- 2 Tbs corn syrup
- 3 Tbs butter
- Pinch of salt
- Stir well to combine and bring to the boil.
- 1/2 cup smooth peanut butter
- 2 Tbs cream
- Mix well until smooth.
Chilli Chocolate Sauce
- 50g butter
- 3 Tbs caster sugar
- 200g bitter sweet chocolate
- 125ml cream
- Combine and stir constantly to avoid separation.
- Add a tsp of chilli powder.
