Tohutao: Ūpoko 10 - Apple Pie
Ingredients:
- ½ Cup Sugar
- 6 Granny Smith Apples
- 100g Butter
- 2 Tbsp Plain Flour
- 4 Tbsp Cinnamon
- 1 Packet of Walnuts
- 1 tsp Ground Ginger
- 6 Egg Whites
- ¼ Cup Sugar
- 1 Egg Yolk
- 1 Tbsp Water
- ½ Cup Chopped Nuts
- 1 Cup Plain Flour
- 2 Tbsp Caster Sugar
- 1 Bottle Cream
- Lemon Rind
Method:
- Preheat oven to 180⁰C.
- Add sugar, egg yolk and water to bowl. Then add butter to mixture to form a firm dough. Wrap in plastic wrap and place in freezer for about 10 minutes. Roll out to fit the cake tin, adding walnuts to the pie.
- Stew apples and all other ingredients together until the apples are half cooked, let cool then add to pie. Cook for 25-30 minutes or until pastry is crispy.
- Whip lemon rind, egg whites and caster sugar together until firm. Use a torch to caramelise the topping, then serve with whipped cream.
