Crust 

  • 250g plain flour
  • 30g grated coconut
  • ¼ tsp salt
  • 150 g cold butter, diced
  • 100g icing sugar
  • 1 egg
  • butter

Pineapple curd

  • 250g diced fresh pineapple
  • zest of 3 limes
  • 150g sugar
  • 250g butter, diced
  • 5 free range organic egg yolks (or whole eggs?)
  • 150 g sugar, extra
  • 1 Vanilla bean

Meringue

  • 350g sugar
  • ¼ cup cold water
  • 3 egg whites
  • 50g sugar, extra
