Vegetable Quiche

Ingredients:

Pastry Base:

  • 1 1/2 cups of flour
  • 1 1/2 tsp baking powder
  • 6 Tbsp milk
  • 6 Tbsp oil
  • Filling:
  • 1 leek chopped, or 1 medium onion instead of leeks - optional
  • Broccoli
  • Cauliflower
  • 6 eggs
  • 1/2 chopped green pepper
  • 1/2 chopped red pepper
  • 1 cup grated tasty cheese
  • 2 courgettes and
  • 1 cup baby spinach
  • 1 cup grated parmesan cheese

Method:

  1. Preheat oven to 180C
  2. Whisk together the pastry base ingredients in a bowl
  3. Press the dough by hand into a greased pie dish, or tray (approx 20x20x3cm)
  4. Prick base with fork
  5. Layer shaved ham on top of it
  6. Layer the vegetables on top of ham
  7. Layer cheese on top of the vegetables (if desired)
  8. Lightly mix eggs and season with salt and pepper
  9. Pour over quiche ingredients (if floating, lightly mix so sinks slightly)
  10. Bake for approximately 45 minutes
