Island Cuisine Pork Spare Ribs


  • 3 Tablespoons of minced garlic

  • 8 pods of starriness

  • 4 tablespoons of Oyster Sauce

  • 3 teaspoons of fresh ginger

  • ½ cup of white sugar

  • 4 bay leaves

  • 3 Tablespoons of tomato paste

  • 2 teaspoons of white pepper

  • 2 tablespoons of sesame

  • 3 tablespoons of tomato sauce

  • ¼ cup of pineapple juice

  • ¼ cup of water

  • ½ of telegraph cucumber

  • ¼ broccoli

  • 4 snake beans

  • 1 large carrot

  • 12 pork spare ribs


  1. Place white sugar into a heated sauce pan.
  2. Stir till sugar caramelizes then add tomato sauce, oyster sauce, minced garlic continue to stir.
  3. Then add in starriness along with pineapple juice.
  4. Chop up ginger and add to the sauce pan along with bay leaves and tomato paste continue to stir.
  5. Add in pork ribs coating thoroughly, white pepper then add water then cover with tin foil and simmer for about 25 mins.
  6. Remove the ribs from sauce pan and cook on the BBQ on a medium heat to slightly char the ribs.
  7. Then chop up vege snake beans, cucumber, carrots to bite size portions and place into remaining rib sauce and cook for 10mins,
  8. Place buttered bread buns on to the BBQ and grill, place ribs onto serving plate then vege and sauce on top and sprinkle sesame over and grilled bread to the side.
