Ohiwa Oysters prepared on a plate

Three Oyster Marinades

Ingredients:

  • 12 x oysters
  • Garlic
  • Spring Onions
  • Lemon Juice
  • Sour Cream
  • Sweet Thai Chilli Sauce
  • Coriander
  • Garlic Chives
  • Balsamic Vinegar

Method:

Te Wairanu tuatahi – 1st Marinade

  1. 3 cloves of Garlic finely chopped
  2. 5 tablespoons of spring onions chopped finely
  3. Lemon juice
  4. Mix ingredients into a bowl and whisk vigorously till combined and spoon on to fresh half shell oysters
Te Wairanu tuarua – 2nd Marinade
  1. 150gms of sour cream
  2. ¼ cup of Thai sweet chilli sauce
  3. Small Bunch of Coriander finely chopped
  4. Mix ingredients into a bowl and whisk vigorously till combined and spoon on to fresh half shell oysters
Te Wairanu tuatoru – 3rd Marinade
  1. 4 tablespoons of Garlic chives chopped finely
  2. ¼ cup of balsamic vinegar
  3. ¼ cup of virgin olive oil
  4. 3 tablespoons of liquid Honey
  5. Mix ingredients into a bowl and whisk vigorously till combined and spoon on to fresh half shell oysters
