In a pot we place our pork with the white vinegar, sugar, onion, cloves, star anise and bay leaf and top it off with chicken stock till covered. Bring it to the boil and cook until the pork is soft and tender 40 – 65 minutes.
Once the pork has cooked add the carrots, turnip, and leek cooking further until the carrots are cooked.
Whilst waiting for the pork to cook the mashed potato can be prepared mashing together with salt and pepper smoothed out with cream and butter.
In a small pot we cook the Sauer Kraut with onions and sugar within its own juices leaving to simmer on a low heat to the side until the pork is cooked.
