Swiss Hot Pot

INGREDIENTS

  • 180g pork belly slice
  • 80g smoked bacon
  • 1 clove chopped garlic
  • ½ tsp of salt
  • 80g onion
  • 80g celery medium diced 110g potato medium diced
  • 110g carrot medium diced
  • 200g cabbage medium diced
  • ½ tsp caraway seeds
  • 1 star anise
  • 3 whole cloves
  • 1 bay leaf 1 tbsp chopped parsley
  • 1 tbsp tomato paste
  • ½ beef tea or stock


METHOD

  1. Dice the pork into large pieces.
  2. Cut bacon same size as the pork
  3. Place into a medium sized pot.
  4. Add the root vegetables
  5. Add the herbs and spices
  6. Pour in the beef tea and stir in the tomato paste
  7. Bring the pot to the boil then reduce the heat and simmer until all the ingredients are cooked about 15 – 20 minutes
