Coconut Curry Cauliflower Rice
- 1 head of cauliflower
- 1 tblspn of coconut oil
- Pepper and salt to taste
- 1 cup of coconut milk or cream
- ¼ tspn curry powder
- spring onions
Cut the cauliflower into florets and blend until a fine rice consistency, then saute in the coconut oil until soft and browning, add coconut milk and add curry powder and simmer for 2 mins, serve with spring onions.
