Trio of Dessert Sauces

Chilli Chocolate Dipping Sauce

Mixed Berry Sauce

  • 3 Tbs caster sugar
  • 2 tsp corn flour
  • ​​1/3 cup water
  1. Dissolve and stir until thickened.
  2. Add 1kg of mixed berries.
  3. Season with salt and sugar and bring to the boil.
  4. Strain to remove seeds.

Salted Caramel Sauce

  • 70g butter
  • 50g brown sugar
  • 50g caster sugar
  • 3Tbs thickened cream
  • 1 tsp of salt to taste.
  1. Melt and combine until smooth.

Peanut Butter Sauce

  • 2 Tbs sugar
  • 2 Tbs corn syrup 
  • 3 Tbs butter
  • Pinch of salt
  • Stir well to combine and bring to the boil.
  • 1/2 cup smooth peanut butter 
  • 2 Tbs cream
  1. Mix well until smooth.

Chilli Chocolate Sauce

  • 50g butter
  • 3 Tbs caster sugar
  • 200g bitter sweet chocolate
  • 125ml cream
  1. Combine and stir constantly to avoid separation.
  2. Add a tsp of chilli powder.
