Ūpoko 13 - Fish & Chips, Orange Kawakawa Summer drink

Homemade Fish & Chips presented on a plate

EQUIPMENT:  
Plate
Serviette
Fork
Knife
Deep Fryer
Grill

INGREDIANTS:

  • 1.2 kg Kumara - mix of gold and red
  • Olive oil
  • 1kg fresh fish - Hoki
  • Fish crumb
  • 3.5 cups panko crumbs
  • 7 tsp kawakawa
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 4 eggs
  • 1/4 cup milk
  • 1 cup flour
  • Watties tomato sauce to serve
  • 2 lemons - sliced into wedges to serve

METHOD: 

  1. Peel kumara and cut into the shape of fries
  2. Mix through olive oil and season with salt and pepper
  3. Cook fries in deep fryer xx minutes ( this needs to be tested)
  4. Cut fish into even sized pieces approx 5cm long
  5. Coat in flour
  6. Coat in egg wash
  7. Coat in panko crumb
  8. Place on hot grill and cook approx
  9. 2mins each side until golden and fish white and no longer translucent.
